A B&W Watercress farm is one of the most complex farming infrastructures in the world.
B&W is a year round, vertically integrated agri-business with seasonal farms
in six states, engineered into some of the most complex and sophisticated farming
infrastructures in the world…all developed in harmony with our environment for
true world-class sustainability.
B&W is proud that some of our farms pre-date the American Civil War in
the 1860’s…a true testament to B&W’s long-standing commitment to environmental stewardship.
Our winter farming operation in Florida uses over 20 miles of canals,
moving fresh cold and clean water through a complex gravity flow water system 24-hours a day.
For every mile of canal we build, we build two miles of roadways.
And every foot is connected with high-powered 3-phase electricity and underground
utilities that bring it all to life.
And further strengthening B&W’s commitment to our land, we only use
this farm for seven months out of the year, allowing the land to lay fallow
and recharge naturally.
Our system of canals runs throughout and around our farms like a protective moat.
It is a farm unlike anything in the world, developed to replicate the natural wetlands that
watercress thrive in. Gently flowing cool water both protects and feeds the plants,
and is captured and re-circulated to preserve our precious water resources.
Every watercress bed and canal are excavated to exacting specifications,
with laser leveling and compacting to eliminate runoff and erosion, and to take advantage
of a unique gravity flow system that conserves energy and saves water.
Watercress is highly perishable, susceptible to both low temperatures
and heat, and has a traditionally short shelf life. B&W has used our 134+ year history to
develop systems, protocols and natural treatments to coax a vibrant 14-day shelf life
out of a vegetable that at one time had to be consumed on the day it was harvested.
It is the combination of a specially developed farming eco-system,
production and processing systems and protocols developed through generations of experience,
and a dedicated and highly skilled workforce that make B&W Quality Grower’s products
the best in the market.
Today B&W employs over 250 skilled full-time workers. Our team trains and
re-trains with a singular focus of Quality, a focus woven into every aspect of our farming
and packing operations.
