Special trains from growing points in West Virginia and Alabama rushed fresh watercress throughout the
United States and into Canada.
Wooden boxes packed with ice served as packaging until the advent of refrigeration and the corrugated box.
Finally, the waxed carton was developed for the wet conditions of fresh specialties like watercress that were still packed in ice.
Today watercress and arugula are available in a variety of traditional and value-added packs, each
designed for the convenience of its intended user.
