Watercress Salad with Honey Sautéed Apples and Almonds

- Core and dice the apple. Add to a skillet or sauté pan with the butter and sauté on medium high heat, stirring often, for 3 minutes. Add the honey and continue stirring and sautéing for an additional minute. Remove from the heat to cool.
- Make the dressing by whisking together the olive oil, lemon juice and mustard until fully incorporated. Season with salt and pepper to taste.
- To assemble, toss the watercress and apples in with the dressing and top with the almonds.
